Method

Preparation

  1. 1

    Prepare the Steak

Take the filet mignon out of the refrigerator and allow it to come to room temperature for about 30 minutes before cooking. This helps in even cooking.

  2. 2

    Season the Steak

Generously season both sides of the filet mignon with salt, black pepper, and garlic powder. Make sure to rub the seasoning into the meat.

Cooking

  1. 3

    Heat the Pan

In a heavy skillet or cast iron pan, heat the olive oil over medium-high heat until it shimmers, about 2-3 minutes.

  2. 4

    Sear the Steak

Place the seasoned filet mignon in the hot pan. Sear for about 4-5 minutes on one side without moving it, until a nice crust forms.

  3. 5

    Flip the Steak

Carefully flip the filet mignon using tongs and cook for an additional 4-5 minutes for medium-rare, adjusting the time for your desired doneness.

  4. 6

    Add Optional Ingredients

In the last minute of cooking, add a sprig of fresh rosemary and a tablespoon of butter to the pan for added flavor. Baste the steak with melted butter using a spoon.

  5. 7

    Rest the Steak

Remove the steak from the pan and let it rest for at least 5 minutes before slicing. This allows the juices to redistribute.
