Preparation

  1. 1

    Prepare the Ingredients

Chop the clams, dice the potatoes, chop the onion and celery, and mince the garlic.

Cooking the Chowder

  1. 2

    Sauté Vegetables

In a large pot, add a splash of oil over medium heat. Add the chopped onion, celery, and minced garlic. Sauté until onions are translucent, about 5 minutes.

  2. 3

    Add Potatoes and Broth

Add the diced potatoes and the chicken or vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer until the potatoes are tender, about 15 minutes.

  3. 4

    Incorporate Clams and Seasonings

Once the potatoes are cooked, add the chopped clams, thyme, bay leaf, salt, black pepper, and paprika. Stir well and let simmer for another 10 minutes.

  4. 5

    Add Cream and Milk

Stir in the heavy cream and milk, and heat through without boiling. Taste and adjust seasoning if necessary.

Serving

  1. 6

    Garnish and Serve

Ladle the chowder into bowls, garnish with chopped parsley and crumbled bacon. Serve hot.
