Prepare the Calamari
Clean and slice the fresh calamari into rings. Pat them dry with paper towels to remove excess moisture.

Make the Coating
In a mixing bowl, combine all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper. Mix well.

Heat the Oil
In a large, deep pan, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Coat the Calamari
Dip each calamari ring into the egg mixture, then coat it with the flour mixture. Shake off any excess flour.

Fry the Calamari
Fry the coated calamari in batches for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Add the Tomatoes
Stir in the canned crushed tomatoes, followed by dried oregano, salt, black pepper, and sugar. Bring to a simmer.

Simmer the Sauce
Let the sauce simmer for about 15-20 minutes, stirring occasionally. Add fresh basil leaves towards the end of cooking.
