Method

Preparing the Salmon

    Make the Blackening Spice

    In a small bowl, mix together paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper.

    Season the Salmon

    Coat each salmon fillet with olive oil and then rub the blackening spice mixture evenly over the fillets. Drizzle fresh lemon juice on top and set aside.

Cooking the Rice

    Boil Water

    In a medium saucepan, bring 4 cups of water to a boil.

    Cook the Rice

    Add 2 cups of long-grain rice and 1 tsp of salt to the boiling water. Stir, reduce the heat to low, cover, and let it simmer for about 15-20 minutes until the rice is tender and the water is absorbed.

Grilling the Salmon

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Salmon

    Place the seasoned salmon fillets on the grill and cook for about 4-5 minutes on each side or until the fish flakes easily with a fork. Remove from the grill and let it rest for a couple of minutes.

Preparing the Vegetables

    Chop the Vegetables

    Slice the bell peppers and zucchini into bite-sized pieces.

    Sauté the Vegetables

    In a skillet, heat 1 tbsp of olive oil over medium heat. Add the chopped vegetables, season with salt and black pepper to taste, and sauté for about 5-7 minutes until they are tender but still vibrant.
