Preparation of Base

    Cook the Bacon

    In a large pot, heat olive oil over medium heat. Add the bacon slices and cook until crispy. Remove bacon, crumble, and set aside, leaving the drippings in the pot.

    Sauté Vegetables

    In the same pot with the bacon drippings, add chopped onion, celery, green bell pepper, and minced garlic. Sauté for about 5-7 minutes until vegetables are soft.

    Add Tomatoes and Broth

    Stir in the canned diced tomatoes, chicken broth, bay leaves, dried thyme, cayenne pepper, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.

Cooking Seafood

    Add Seafood

    After 30 minutes, add the shrimp, crab meat, and oysters to the pot. Cook for an additional 10 minutes until the shrimp are cooked through and oysters are plump.

Making Remoulade Sauce

    Combine Ingredients

    In a bowl, mix together mayonnaise, Dijon mustard, hot sauce, lemon juice, garlic powder, paprika, and salt. Adjust seasoning to taste.

Serving

    Serve the Gumbo

    Ladle the gumbo into bowls and top with crumbled bacon and a dollop of remoulade sauce. Enjoy!
