Preparation
Prepare the seafood
Rinse the shrimp, scallops, and fish fillets under cold water. Pat dry with paper towels.
Chop the vegetables
Dice the red bell pepper, slice the zucchini, and halve the cherry tomatoes. Mince the garlic and chop the fresh parsley.
Cooking
Sauté the garlic and vegetables
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Add the diced red bell pepper and sliced zucchini, and cook for another 3-4 minutes.
Cook the seafood
Add the shrimp, scallops, and fish fillets to the skillet. Pour in the white wine and lemon juice. Season with salt and black pepper. Cook for 5-7 minutes, stirring occasionally, until the seafood is cooked through and opaque.
Finish with cherry tomatoes and parsley
Add the halved cherry tomatoes and chopped parsley to the skillet. Stir gently and cook for an additional 2-3 minutes until the tomatoes are slightly softened. Remove from heat.
Serving
Plate the dish
Transfer the seafood medley to serving plates. You may garnish with additional parsley if desired.
