Prepare the Pork Chops
Remove pork chops from the refrigerator and let them sit at room temperature for about 15 minutes before cooking. This helps them cook evenly.

Rub both sides of the pork chops with olive oil, salt, and black pepper. If you are making blackened pork chops, mix paprika, cayenne pepper, garlic powder, onion powder, and thyme together in a small bowl and rub this seasoning mix generously over both sides of the chops.
