Preparation of Shrimp

    Marinate and Season Shrimp

    In a bowl, combine the shrimp with salt, black pepper, and cayenne pepper. Let it marinate for about 15 minutes.

    Prepare Breading

    Set up a breading station: Place flour in one bowl, beaten egg in another, and a mix of cornmeal and a pinch of salt in a third bowl.

Cooking Shrimp

    Bread the Shrimp

    Dip each marinated shrimp first in the flour, then in the beaten egg, and finally in the cornmeal mixture until fully coated.

    Fry the Shrimp

    Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the breaded shrimp in batches and fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Assemble Po'boys

    Prepare Bread

    Slice the French bread pieces lengthwise without cutting all the way through, creating a pocket.

    Spread a generous layer of mayo inside each bread pocket, then add a layer of shredded lettuce, followed by sliced tomatoes, and finally, the fried shrimp.
