    Prepare Shrimp

    In a skillet over medium heat, add a tablespoon of olive oil. Once hot, add the shrimp and season with salt, black pepper, and hot sauce. Sauté the shrimp until they turn pink and opaque, about 3-4 minutes. Remove from heat.

    Assemble Poboy

    Slice the French bread in half lengthwise. Spread mayonnaise on both sides. Layer the sautéed shrimp, shredded lettuce, and sliced tomatoes inside the bread. Close the sandwich and cut it in half to serve.

Gumbo

    Make Roux

    In a large pot, heat the olive oil over medium heat. Gradually whisk in the flour, stirring constantly for about 15-20 minutes until the mixture turns a dark brown color, resembling chocolate.

    Cook Vegetables

    Add the chopped onion, green bell pepper, celery, and minced garlic to the roux. Cook for 5-7 minutes until the vegetables are tender.

    Add Broth and Sausage

    Gradually pour in the chicken broth while stirring. Add the sliced Andouille sausage, diced tomatoes (with juice), bay leaves, thyme, cayenne pepper, salt, and black pepper. Stir well to combine.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 30 minutes, stirring occasionally.

    Add Okra

    Stir in the sliced okra and continue to simmer for another 10-15 minutes until the okra is tender and the gumbo has thickened slightly.

    Serve

    Remove bay leaves before serving. Ladle the gumbo into bowls and serve hot alongside the half poboy.
