Method

Preparation

  1. 1

    Clean the Seafood

Rinse the shrimp and scallops under cold water, removing any shells or impurities. Clean the cod fillets and clams thoroughly.

  2. 2

    Prepare the Breading

In a large bowl, combine the all-purpose flour, cornmeal, Old Bay seasoning, salt, and black pepper. Mix well to ensure an even distribution of seasoning.

Cooking

  1. 3

    Heat the Oil

In a large, deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 4

    Bread the Seafood

Dredge the cleaned shrimp, scallops, cod fillets, and clams in the prepared breading mixture, making sure to coat each piece evenly.

  3. 5

    Fry the Seafood

Carefully place the breaded seafood into the hot oil, cooking in batches if necessary to avoid overcrowding the pan. Fry for about 3-4 minutes or until the seafood is golden brown and cooked through.

  4. 6

    Drain and Keep Warm

Using a slotted spoon, remove the fried seafood from the oil and place them on a paper towel-lined plate to drain excess oil. Keep the fried seafood warm in a low oven (about 200°F or 93°C) while cooking the rest.

Serving

  1. 7

    Garnish and Serve

Once all the seafood is cooked, arrange it on a large platter. Garnish with lemon wedges and fresh parsley. Serve immediately with your choice of dipping sauces.
