Method
Crabcake Preparation
- 1
Prepare the Crab Mixture
In a large mixing bowl, gently combine the fresh lump crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, chopped green onions, bread crumbs, beaten egg, salt, and black pepper. Be careful not to break the crab meat too much.
- 2
Form the Crabcakes
Once the mixture is well combined, form it into patties about 3 inches in diameter. You should be able to make approximately 8 crabcakes.
- 3
Chill the Crabcakes
Place the formed crabcakes on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
Cooking the Crabcakes
- 4
Heat the Oil
In a large skillet, heat the olive oil over medium heat until hot.
- 5
Cook the Crabcakes
Carefully place the crabcakes in the skillet and cook for about 4-5 minutes on each side, or until they are golden brown and cooked through.
- 6
Drain and Keep Warm
Remove the crabcakes from the skillet and place them on paper towels to drain any excess oil. Keep warm in a low oven until ready to serve.
Remoulade Sauce Preparation
- 7
Mix the Sauce Ingredients
In a small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, chopped capers, and hot sauce. Season with salt and black pepper to taste.
- 8
Chill the Sauce
Cover the sauce and refrigerate for at least 15 minutes to allow the flavors to meld.
