Chocolate Mousse

    Melt the Chocolate

    Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate over a double boiler or in the microwave in 20-second intervals, stirring until smooth. Allow it to cool slightly.

    Whip the Cream

    In a mixing bowl, whip 300 ml of heavy cream until soft peaks form. Be careful not to over-whip. Set aside.

    Beat Egg Whites

    In a separate clean bowl, add the egg whites and a pinch of salt. Using an electric mixer, beat the egg whites until soft peaks form. Gradually add the sugar while continuing to beat until stiff peaks form.

    Combine Mixtures

    Gently fold the melted chocolate into the whipped cream until well combined. Then, fold in the beaten egg whites a little at a time, being careful not to deflate the mixture.

    Flavor the Mousse

    Add 1 tsp of vanilla extract to the mixture and fold gently until incorporated.

    Chill

    Spoon the mousse into serving dishes and refrigerate for at least 2 hours to set.

Whipped Cream Topping

    Whip the Cream

    In a clean mixing bowl, whip 100 ml of heavy cream until soft peaks form. Gradually add 20 g of powdered sugar and 0.5 tsp of vanilla extract while continuing to whip until stiff peaks form.

    Serve

    Once the chocolate mousse is set, top each serving with a dollop of the whipped cream before serving.
