Preparing the Cake

    Melt Chocolate and Butter

    In a medium heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until fully melted and smooth. Remove from heat and let it cool slightly.

    Mix Eggs and Sugar

    In a separate bowl, whisk together the large eggs, egg yolks, and granulated sugar until the mixture is pale and slightly thickened.

    Combine Mixtures

    Add the melted chocolate mixture to the egg mixture and stir until well combined. Add the vanilla extract and a pinch of salt, mixing thoroughly.

    Add Flour

    Sift the all-purpose flour over the chocolate mixture and gently fold it in using a spatula until just combined. Be careful not to overmix.

Baking the Cakes

    Prepare Ramekins

    Preheat your oven to 425°F (220°C). Grease four ramekins (6 oz size) with butter and dust with flour to prevent sticking.

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling them about 2/3 full.

    Bake

    Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

    Cool

    Remove the baking sheet from the oven and let the cakes sit for 1 minute before inverting them onto plates.

Serving

    Garnish and Serve

    Dust the tops of the cakes with powdered sugar. Serve immediately with a scoop of vanilla ice cream on the side.
