Prepare the Crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.

Form the Crust
Press the crumb mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake in the preheated oven for 10 minutes. Remove from oven and set aside to cool.

Prepare the Filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add granulated sugar and continue to beat until well combined and creamy.

Add Remaining Ingredients
Add sour cream, vanilla extract, and eggs to the cream cheese mixture. Beat until fully incorporated. Gradually add all-purpose flour and mix until smooth.

Pour into Crust
Pour the filling over the cooled crust in the springform pan, spreading it evenly.

Bake the Cheesecake
Bake the cheesecake in the preheated oven for 55-60 minutes, or until the edges are set and the center is slightly jiggly.

Cool the Cheesecake
Turn off the oven and crack the door open. Allow the cheesecake to cool in the oven for 1 hour. Then refrigerate for at least 4 hours, preferably overnight.
Topping (optional)

Prepare the Topping
Before serving, wash the fresh berries and pat them dry. If desired, sprinkle with powdered sugar.

Slice the cheesecake, top with fresh berries, and serve immediately.
