Main Dish

Side Dish 1: Coleslaw

Side Dish 2: Hush Puppies

Method

Main Dish

  1. 1

    Prepare the Catfish

In a bowl, whisk together the buttermilk and egg. Submerge the catfish fillets in this mixture and let them marinate for at least 30 minutes.

  2. 2

    Prepare the Coating

In a separate shallow dish, combine cornmeal, flour, salt, black pepper, and cayenne pepper. Mix well.

  3. 3

    Coat the Catfish

Remove the catfish from the buttermilk mixture, allowing excess to drip off. Dredge each fillet in the cornmeal mixture, ensuring they are well coated.

  4. 4

    Fry the Catfish

In a large skillet, heat oil over medium-high heat. Once hot, carefully place the coated catfish in the oil and fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Side Dish 1: Coleslaw

  1. 5

    Prepare the Coleslaw

In a large bowl, combine the shredded cabbage and grated carrots.

  2. 6

    Make the Dressing

In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

  3. 7

    Combine and Refrigerate

Pour the dressing over the cabbage and carrots. Toss well to combine and refrigerate for at least 30 minutes before serving.

Side Dish 2: Hush Puppies

  1. 8

    Mix the Dry Ingredients

In a bowl, combine cornmeal, flour, baking powder, salt, and sugar. Mix well.

  2. 9

    Add Wet Ingredients

In another bowl, beat the egg and mix in milk and chopped onion. Combine with the dry ingredients and stir until just mixed.

  3. 10

    Fry the Hush Puppies

In a large skillet, heat oil over medium heat. Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
