Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips (about 1/4 inch thick) to create fries.
Soak the Potatoes
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and results in crispier fries.
Heat the Oil
In a deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Potatoes
Drain and pat dry the soaked fries. Fry them in batches for about 4-5 minutes or until golden brown and crispy. Remove and drain on paper towels.
Season the Fries
While the fries are still hot, sprinkle with salt and black pepper to taste.
Add Truffle and Cheese
