Prepare the Quinoa

Rinse the quinoa under cold water. In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and the liquid is absorbed. Fluff with a fork and set aside.

Cook the Salmon

Preheat the grill to medium-high heat. Brush the salmon fillets with olive oil and season with salt and black pepper. Grill the salmon for 4-5 minutes on each side or until it flakes easily with a fork. Remove from the grill and let it rest for a few minutes.

Sauté the Spinach

In a large skillet, add a little olive oil over medium heat. Add the spinach and sauté for about 2-3 minutes until wilted. Season with salt and pepper to taste.

Assemble the Power Bowl

In a serving bowl, layer the quinoa, sautéed spinach, grilled salmon, halved cherry tomatoes, and sliced avocado. Drizzle with lemon juice and sprinkle with chopped parsley before serving.
