Waffle Batter

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, ground cinnamon, ground nutmeg, and salt. Whisk together until evenly mixed.

    Combine Wet Ingredients

    In another bowl, beat the eggs and then add the milk, vegetable oil, and vanilla extract. Mix well until combined.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the grated carrots until evenly distributed.

    Preheat Waffle Maker

    Preheat your waffle maker according to the manufacturer’s instructions.

    Cook Waffles

    Pour the appropriate amount of batter into the preheated waffle maker and cook until golden brown. Repeat with remaining batter.

Cream Cheese Icing

    Prepare Cream Cheese Icing

    In a medium bowl, beat the cream cheese and butter together until creamy and smooth. Gradually add the powdered sugar, mixing until fully incorporated. Stir in the vanilla extract and mix until smooth.

Assembly and Serving

    Once the waffles are cooked, place them on a serving plate. Spread a generous amount of cream cheese icing on top of each waffle.

    Add Toppings

    Sprinkle toasted coconut flakes over the icing. Add a scoop of vanilla ice cream on the side and drizzle caramel sauce over the top.
