Method
Cooking the Pasta
Boil the Pasta
In a large pot, bring salted water to a boil. Add 2 cups of elbow macaroni and cook according to package instructions until al dente, usually about 8-10 minutes.
Drain the Pasta
Once cooked, drain the macaroni in a colander and set aside. Do not rinse.
Making the Cheese Sauce
Make the Roux
In the same pot over medium heat, melt 4 tablespoons of butter. Once melted, add 1 tablespoon of all-purpose flour and whisk constantly for about 1-2 minutes until it turns a light golden color.
Add Milk
Gradually whisk in 2 cups of milk, ensuring there are no lumps. Continue to whisk until the mixture starts to thicken, about 5-7 minutes.
Add Cheese and Seasonings
Once thickened, reduce heat to low and add 2 cups of shredded cheddar cheese, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of paprika. Stir until the cheese is fully melted and the sauce is smooth.
Combine and Bake (optional)
Combine Pasta and Sauce
Add the drained macaroni to the cheese sauce and stir until the pasta is completely coated.
Prepare for Baking
If desired, transfer the mac and cheese to a baking dish. In a small bowl, mix 1 cup of breadcrumbs and 1 cup of grated Parmesan cheese, then sprinkle evenly over the top.
Bake
Preheat the oven to 350°F (175°C) and bake for 20-25 minutes until the top is golden and crispy.
