Burger Preparation

    Season the Tuna

    Pat the fresh tuna steak dry with paper towels. Season both sides with salt and black pepper.

    Sear the Tuna

    Heat olive oil in a skillet over medium-high heat. Once hot, add the tuna steak and sear for about 2-3 minutes on each side for medium-rare. Remove from heat and let rest.

    Prepare the Burger Rolls

    Slice the artisan rolls in half and toast them lightly in the same skillet or toaster until golden brown.

Pickled Vegetables Preparation

    Create Pickling Solution

    In a bowl, mix rice vinegar, sugar, and salt until dissolved.

    Pickle the Vegetables

    Add the julienned carrots and daikon radish to the vinegar mixture. Let sit for at least 15 minutes. Add sliced cucumber just before serving.

Kimchi Aioli Preparation

    Make the Aioli

    In a small bowl, combine mayonnaise, chopped kimchi, lemon juice, and minced garlic. Mix well until smooth and creamy.

Assembling the Burger

    Assemble the Burger

    On the bottom half of each toasted roll, spread a generous amount of kimchi aioli. Place the seared tuna steak on top, followed by the pickled vegetables. Top with the other half of the roll.

    Serve

    Serve immediately with extra pickled vegetables on the side, if desired.
