Prepare the Ingredients
Wash the iceberg lettuce hearts thoroughly under cold water. Pat them dry with a paper towel and cut each heart into quarters. Rinse the cherry tomatoes and slice them in half.

Cook the Bacon
In a skillet over medium heat, cook the applewood bacon until crispy. This should take about 5-7 minutes. Once cooked, transfer the bacon to a plate lined with paper towels to absorb excess grease. Once cooled, crumble the bacon into bite-sized pieces.

Assemble the Salad
On a large serving platter, arrange the iceberg lettuce quarters. Scatter the halved cherry tomatoes over the lettuce, followed by the crumbled applewood bacon. Finally, sprinkle the smoked bleu cheese evenly over the top.

In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and black pepper until well combined and emulsified.
