Method

Preparing the Skewers

    Skewer Preparation

    Thread the shrimp and chorizo slices onto the wooden skewers, alternating between shrimp and chorizo. Each skewer should have 3-4 shrimp and 2-3 slices of chorizo.

    If desired, marinate the skewers in a mixture of olive oil, minced garlic, and lemon juice for 30 minutes before grilling.

Making Garlic Chips

    Frying Garlic Chips

    In a small saucepan, heat the olive oil over medium heat. Add the thinly sliced garlic and fry until golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels.

Preparing Avocado

    In a bowl, combine the diced avocados with lime juice and salt. Mix gently to avoid mashing the avocados. Set aside.

Making Sherry Vinaigrette
