Cook the Pork
In a slow cooker, place the pork shoulder and add diced onion, minced garlic, smoked paprika, cumin, salt, and black pepper. Cover and cook on low for 8 hours or until the pork is tender.

Shred the Pork
Once cooked, remove the pork from the slow cooker and use two forks to shred the meat. Return the shredded pork to the slow cooker and mix in the BBQ sauce. Let it cook for an additional 30 minutes on low to combine flavors.

Prepare the Vegetables
In a mixing bowl, combine the shredded carrot, finely shredded cabbage, sliced green onions, and chopped cilantro. Mix well and set aside.

Assemble the Spring Rolls
Take a spring roll wrapper and place it on a clean surface. Add a generous amount of the pulled pork filling and top with the vegetable mixture. Fold the sides of the wrapper over the filling, then roll it tightly from the bottom to the top. Repeat with remaining wrappers.
