Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a bowl, combine olive oil, Ras al-Hanout, salt, and black pepper. Rub this mixture over the salmon fillets, ensuring they are well-coated. Allow the salmon to marinate for at least 20 minutes.

  2. 2

    Cook the Salmon

Preheat your grill or oven to 400°F (200°C). Place the marinated salmon fillets on the grill or in a baking dish. Cook for about 12-15 minutes or until the salmon flakes easily with a fork.

Preparing the Couscous

  1. 3

    Cook the Couscous

In a saucepan, bring vegetable broth or water to a boil. Add salt and olive oil. Stir in couscous, remove from heat, cover, and let it sit for about 5 minutes. Fluff with a fork before serving.

Preparing the Onions

  1. 4

    Sauté the Onions

Slice the Vidalia onions thinly. In a skillet, heat olive oil over medium heat. Add onions and salt, and sauté for about 10-15 minutes until they are soft and caramelized. Stir in balsamic vinegar and cook for an additional 2 minutes.
