Method

Preparation of Eggplant

  1. 1

    Preheat Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Slice Eggplant

Slice the eggplant into thin strips, about 1/4 inch thick, to resemble fries.

  3. 3

    Salting Eggplant

Sprinkle the sliced eggplant with salt and let it sit for 15-20 minutes to draw out excess moisture.

  4. 4

    Rinse and Dry

After 20 minutes, rinse the eggplant slices under cold water and pat them dry with paper towels.

Breading Process

  1. 5

    Breading Station Setup

Set up a breading station: in one bowl, place the flour; in the second bowl, beat the eggs; and in the third bowl, mix the breadcrumbs and parmesan cheese.

  2. 6

    Breading Eggplant

Dip each eggplant slice first in the flour, then in the beaten eggs, and finally coat with the breadcrumb mixture.

  3. 7

    Arrange on Baking Sheet

Place the coated eggplant fries on a baking sheet lined with parchment paper.

Cooking

  1. 8

    Add Olive Oil

Drizzle olive oil over the breaded eggplant fries, ensuring they are well-coated.

  2. 9

    Bake Eggplant Fries

Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy.

Dipping Sauce

  1. 10

    Prepare Dipping Sauce

In a small bowl, mix together mayonnaise, ketchup, hot sauce, garlic powder, and lemon juice until well combined.
