Method
Corn Fritters
Prepare the Batter
In a large mixing bowl, combine the sweet corn kernels, all-purpose flour, chopped green onions, eggs, milk, baking powder, salt, and black pepper. Mix until just combined.
Heat the Oil
In a large skillet, heat the vegetable oil over medium heat until hot but not smoking.
Cook the Fritters
Using a ladle, pour about 1/4 cup of the batter into the hot oil for each fritter. Flatten slightly with the back of the ladle and cook for 3-4 minutes on each side or until golden brown. Remove from the skillet and place on paper towels to drain excess oil.
Serve
Serve the corn fritters warm with jalapeno aioli on the side.
Jalapeno Aioli
Prepare the Aioli
In a small bowl, combine the mayonnaise, finely chopped jalapeno, minced garlic, lime juice, salt, and black pepper. Mix well until smooth.
Chill
Refrigerate the jalapeno aioli for at least 30 minutes before serving to allow the flavors to meld.
