Method

Sorbet Preparation

  1. 1

    Blend the Fruit

In a blender, combine 2 cups of fresh fruit, 1 cup of granulated sugar, and 1 cup of water. Blend until smooth.

  2. 2

    Add Lemon Juice

Add 2 tablespoons of lemon juice to the fruit mixture and blend again to combine.

  3. 3

    Chill the Mixture

Transfer the mixture to a bowl, cover, and refrigerate for at least 2 hours until chilled.

  4. 4

    Churn the Sorbet

Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions, usually about 20-25 minutes.

  5. 5

    Freeze the Sorbet

Transfer the churned sorbet to a lidded container and freeze for at least 4 hours until firm.

Gelato Preparation

  1. 6

    Heat Milk and Cream

In a saucepan, combine 2 cups of whole milk and 1 cup of heavy cream. Heat over medium heat until just simmering.

  2. 7

    Whisk Egg Yolks and Sugar

In a bowl, whisk together 4 egg yolks and 3 tablespoons of granulated sugar until the mixture is pale and thick.

  3. 8

    Temper the Egg Mixture

Slowly pour a small amount of the hot milk mixture into the egg yolk mixture, whisking constantly to temper the eggs. Then, gradually add the tempered egg mixture back into the saucepan.

  4. 9

    Cook the Mixture

Cook the mixture over medium heat, stirring constantly until it thickens enough to coat the back of a spoon, about 5-7 minutes.

  5. 10

    Add Vanilla

Remove from heat and stir in 1 teaspoon of vanilla extract. Let it cool.

  6. 11

    Chill the Gelato Base

Transfer the gelato base to a bowl, cover, and refrigerate for at least 2 hours until completely chilled.

  7. 12

    Churn the Gelato

Pour the chilled gelato base into an ice cream maker and churn according to the manufacturer’s instructions, usually about 20-25 minutes.

  8. 13

    Freeze the Gelato

Transfer the churned gelato to a lidded container and freeze for at least 4 hours until firm.
