Caramelizing Onions

Prepare the onions
Slice the medium onions thinly.

Cook the onions
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook for about 20-25 minutes, stirring occasionally, until the onions are golden brown and caramelized. Remove from heat and set aside.

Making Black Garlic Aioli

Prepare the aioli
In a small bowl, mash the black garlic cloves into a paste. Mix in the mayonnaise until well combined. Add a pinch of salt and pepper to taste.
Assembling the Sandwich

Toast the rolls
Slice the artisan rolls in half and toast them lightly in the oven or on a skillet until they are golden brown.

Layer the ingredients
Spread a generous amount of black garlic aioli on both halves of the toasted rolls. On the bottom half, layer the caramelized onions, sautéed mushrooms, and arugula. Finally, add the sliced Gruyere cheese on top.
