Prepare the Bread
Cut the stale bread into bite-sized cubes. If it's very dry, you can briefly toast it in the oven at 350°F (175°C) for about 10 minutes until just crispy but not browned.

Prepare the Tomatoes
Chop the ripe tomatoes into bite-sized pieces and place them in a large mixing bowl.

Combine Ingredients
Add the cubed bread, fresh mozzarella (cubed or torn), and basil leaves to the bowl with the tomatoes.

Dress the Salad
In a small bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper. Drizzle this dressing over the salad and toss gently to combine.

Allow the salad to sit for about 15 minutes before serving, so the bread absorbs the flavors from the dressing and tomatoes.
