Leg of Lamb
Method
Preparation and Cooking
- 1
Prepare the Marinade
In a small bowl, mix together minced garlic, chopped rosemary, thyme, olive oil, salt, black pepper, and lemon juice to form a marinade.
- 2
Marinate the Lamb
Place the leg of lamb in a large dish and rub the marinade all over the meat. Cover and let it marinate in the refrigerator for at least 2 hours, or overnight for best results.
- 3
Preheat the Oven
Preheat your oven to 375°F (190°C).
- 4
Roast the Lamb
Place the marinated leg of lamb in a roasting pan. Pour vegetable broth around the lamb. Roast in the preheated oven for about 1.5 to 2 hours or until the internal temperature reaches 145°F (63°C) for medium-rare.
- 5
Rest and Serve
Remove the lamb from the oven and let it rest for 15 minutes before slicing. Serve with seasonal sides of your choice.
