    Prepare the Veal

    Pound the veal cutlets to about 1/4 inch thick. Season both sides with salt and black pepper.

    Dredge in Flour

    Place the flour in a shallow dish. Dredge each cutlet in flour, shaking off the excess.

    Sear the Cutlets

    In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Add the veal cutlets and cook for 2-3 minutes on each side until golden brown. Remove the cutlets from the skillet and set aside.

    Make the Sauce

    In the same skillet, add the Marsala wine and bring to a boil, scraping up any browned bits from the bottom of the pan. Add the chicken broth and simmer for about 5 minutes.

    Return the veal cutlets to the skillet and cook for an additional 2-3 minutes, until they are heated through. Stir in the remaining butter and chopped parsley.
