1. Sear the Meat

In a large Dutch oven, heat the olive oil over medium-high heat. Season the chuck roast with salt and pepper. Sear the roast on all sides until browned, about 4-5 minutes per side. Remove the roast and set aside.

2. Sauté the Vegetables

In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened. Add the minced garlic and cook for an additional minute.

3. Deglaze the Pot

Pour in the red wine and scrape the bottom of the pot to deglaze, allowing the wine to reduce for about 3-4 minutes.

4. Add Broth and Herbs

Return the seared chuck roast to the pot. Add the beef broth, thyme, and bay leaves. Bring to a simmer.

5. Braise the Beef

Cover the pot and transfer it to a preheated oven at 325°F (160°C). Braise for about 3 hours, or until the meat is fork-tender.

6. Serve

Remove the roast from the oven and let it rest for about 10 minutes before slicing. Serve with the vegetables and sauce from the pot.
