Method

Preparation

  1. 1

    Prepare the Filling

In a large bowl, combine ricotta cheese, chopped fresh spinach (lightly cooked and drained), grated Parmesan cheese, egg, salt, black pepper, and nutmeg. Mix until well combined.

  2. 2

    Cook the Manicotti

Bring a large pot of salted water to a boil. Cook the manicotti tubes for about 6-7 minutes until slightly softened but not fully cooked. Drain and let cool.

Assembly and Cooking

  1. 3

    Stuff the Manicotti

Using a small spoon or piping bag, carefully fill each manicotti tube with the ricotta and spinach mixture.

  2. 4

    Prepare the Sauce

In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Pour in the marinara sauce, season with salt and pepper, and let simmer for about 5 minutes.

  3. 5

    Assemble the Dish

Spread a thin layer of marinara sauce on the bottom of a baking dish. Place the stuffed manicotti in the dish, then pour the remaining marinara sauce over the top. Sprinkle shredded mozzarella cheese and chopped basil over everything.

  4. 6

    Bake

Cover the baking dish with foil and bake in a preheated oven at 375°F (190°C) for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
