Preparation

Preheat the Oven
Preheat your oven to 200°C (400°F).

Prepare the Salmon
Season the salmon fillets with salt and black pepper. Place them on a baking sheet lined with parchment paper.

Add Pesto
Spread a generous amount of basil pesto on top of each salmon fillet.

Prepare the Puff Pastry
Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into two equal rectangles.

Wrap the Salmon
Place each salmon fillet on a pastry rectangle. Fold the pastry over the salmon and seal the edges by pressing with a fork.

Brush with Egg Wash
In a small bowl, whisk together the egg yolk and milk. Brush the mixture over the top of each pastry-wrapped salmon.

Add Breadcrumbs
Sprinkle breadcrumbs over the top of the egg-washed pastry for added texture.

Bake
Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown and flaky.

Serve
Remove from the oven and let cool for a few minutes before serving. Enjoy your Filet de Saumon en Croûte!
