Method

Preparation

  1. 1

    Prepare the Zucchini

Slice the zucchini into thin rounds. Drizzle with 1 tablespoon of olive oil and season with salt and black pepper.

  2. 2

    Grill the Zucchini

Preheat the grill to medium-high heat. Grill the zucchini slices for about 3-4 minutes on each side until they are tender and have grill marks. Remove from grill and set aside.

  3. 3

    Roast the Tomatoes

Preheat the oven to 375°F (190°C). In a baking dish, toss the cherry tomatoes with 1 tablespoon of olive oil, salt, and pepper. Roast in the oven for 15-20 minutes until they are soft and slightly caramelized.

  4. 4

    Prepare the Focaccia

While the tomatoes are roasting, lightly toast the focaccia slices on the grill or in the oven for about 2-3 minutes until golden brown.

  5. 5

    Assemble the Dish

On each toasted focaccia slice, layer grilled zucchini, a generous portion of burrata cheese, and roasted cherry tomatoes. Drizzle with remaining olive oil and garnish with fresh basil. If using, add slices of prosciutto on top.
