Prepare Sushi Rice

Rinse the Rice
In a fine mesh strainer, rinse the sushi rice under cold water until the water runs clear. This step helps remove excess starch.

Add rinsed sushi rice and 2.5 cups of water to a rice cooker or pot. Cook according to the rice cooker's instructions or bring to a boil, then cover and reduce to low heat for 18-20 minutes.

Once the rice is cooked, transfer it to a large bowl. In a small saucepan, heat rice vinegar, sugar, and salt over low heat until dissolved. Pour the mixture over the rice and gently fold to combine. Allow to cool to room temperature.

Place a bamboo sushi mat on a clean surface. Lay one nori sheet shiny side down on the mat.
