Preparation

1. Prepare the Mash

In a large mash tun, add the pale malt, crystal malt, and roasted barley. Heat 5 gallons of filtered water to around 165°F (74°C) and pour over the grains. Stir to ensure all grains are saturated.

2. Mash Rest

Let the mash rest for about 60 minutes at 150°F (65°C). This allows the enzymes to convert the starches into sugars.

Boiling

3. Boil the Wort

After the mash rest, sparge the grains with hot water to collect the wort. Bring the wort to a boil in a large kettle.

4. Add Hops

Once boiling, add the Cascade hops and boil for 60 minutes. After 30 minutes, add the Centennial hops.

Fermentation

5. Cool the Wort

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

6. Pitch the Yeast

Transfer the cooled wort to a sanitized fermenter. Sprinkle the ale yeast on top and seal with an airlock.

7. Ferment

Allow the beer to ferment for about 1-2 weeks at a consistent temperature of around 68°F (20°C).

Bottling

8. Prepare Bottles

Sanitize your bottles and caps. In a small pot, dissolve the corn sugar in 2 cups of boiling water to create priming solution.

9. Bottle the Beer

Add the priming solution to the bottom of the sanitized bottles. Carefully siphon the beer into the bottles, leaving about an inch of headspace.

10. Cap and Condition

Cap the bottles and store them at room temperature for about 1-2 weeks to carbonate.

Once carbonated, chill the bottles in the fridge, then serve your locally brewed craft beer in a glass and enjoy!
