Cooking the Pasta

    Boil Water

    In a large pot, bring salted water to a boil. Use enough water to allow the spaghetti to cook evenly.

    Cook Spaghetti

    Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

    Reserve Pasta Water

    Before draining, reserve about 1 cup of the pasta cooking water. This will help to create the sauce later.

    Drain Pasta

    Once cooked, drain the spaghetti and set aside, but do not rinse.

Preparing the Sauce

    Cook Pancetta/Guanciale

    In a large skillet over medium heat, add the pancetta or guanciale. Cook until crispy, about 4-5 minutes, then remove from heat.

    Prepare Egg Mixture

    In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

Combining Ingredients

    Combine Pasta and Meat

    Add the drained spaghetti to the skillet with the pancetta/guanciale. Toss to combine and coat the pasta with the rendered fat.

    Remove the skillet from heat and quickly pour the egg mixture over the spaghetti, tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

    Taste and adjust seasoning with salt if necessary. Serve immediately, garnished with additional Parmesan cheese and black pepper if desired.
