Broth Preparation

    Prepare the Pork Bones

    Rinse the pork bones under cold water to remove any impurities. Place them in a large pot and cover with fresh water. Bring to a boil and let it boil for about 10 minutes. Drain and rinse again.

    Make the Broth

    In a large pot, add the rinsed pork bones and 4 liters of fresh water. Add the ginger, garlic, and green onions. Bring to a boil, then reduce to a simmer. Cover partially and let it cook for 6-8 hours, skimming off any foam that rises to the top.

    Season the Broth

    After simmering, strain the broth into a clean pot. Add soy sauce, mirin, and salt to taste. Keep the broth warm while preparing the noodles and toppings.

Noodle and Topping Preparation

    Cook the Ramen Noodles

    In a separate pot, bring water to a boil. Add the ramen noodles and cook according to package instructions (usually 3-5 minutes). Drain and rinse under cold water to stop the cooking process.

    Prepare the Chashu Pork

    Slice the chashu pork into thin pieces and set aside. If using homemade chashu, follow your preferred recipe for preparation.

    Boil the Eggs

    Bring a small pot of water to a boil. Gently add the eggs and boil for 6-7 minutes for soft-boiled eggs. Remove and place in an ice bath to stop cooking. Once cool, peel the eggs and cut in half.

    Assemble the Ramen Bowl

    In a bowl, place a serving of noodles, pour hot pork broth over the top, and arrange slices of chashu pork, soft-boiled eggs, nori sheets, bamboo shoots, menma, and corn. Drizzle with chili oil and sprinkle sesame seeds on top.
