Prepare the Katsu

Prepare Chicken
Season the chicken breasts with salt and black pepper on both sides.

Coat Chicken
Dredge each seasoned chicken breast in flour, shaking off any excess. Dip in beaten eggs, then coat with panko breadcrumbs, pressing gently to adhere.

Fry Chicken
Heat vegetable oil in a large frying pan over medium heat. Fry the chicken breasts for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
Make the Curry Sauce

Sauté Aromatics
In the same pan used for frying chicken, remove excess oil, leaving about 1 tablespoon. Add finely chopped onion, garlic, and ginger. Sauté until softened and fragrant.

Add Curry Powder
Stir in curry powder and cook for 1 minute to release its flavors.

Simmer Sauce
Pour in chicken broth, soy sauce, and sugar. Bring to a boil, then reduce heat and simmer for about 15-20 minutes until the vegetables are tender and the sauce has thickened.
Serve the Dish

Plate the Katsu
Slice the fried chicken katsu into strips and place on a plate.

Serve with a portion of cooked rice and ladle the curry sauce over the chicken. Garnish with chopped green onions and pickled ginger.
