Method

Dough Preparation

  1. 1

    Make the Dough

In a mixing bowl, combine the all-purpose flour and salt. Gradually add boiling water while stirring with a fork or chopsticks until a shaggy dough forms.

  2. 2

    Knead the Dough

Transfer the dough onto a lightly floured surface and knead for about 5-7 minutes until smooth and elastic. Cover with a damp cloth and let it rest for at least 30 minutes.

Filling Preparation

  1. 3

    Prepare the Filling

In a large bowl, combine ground pork, chopped cabbage, green onion, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are combined.

Assembly

  1. 4

    Roll the Dough

After resting, divide the dough into small pieces (about 1 inch in size). Roll each piece into a thin circle (about 3 inches in diameter) on a floured surface.

  2. 5

    Fill the Gyoza

Place about 1 tablespoon of filling in the center of each dough circle. Moisten the edges with water, fold over, and pinch to seal tightly.

Cooking

  1. 6

    Cook the Gyoza

In a large skillet over medium heat, add a tablespoon of oil and place the gyoza in a single layer. Cook for about 2-3 minutes until the bottoms are golden brown.

  2. 7

    Steam the Gyoza

Add about 1/4 cup of water to the skillet and cover immediately. Steam for about 5-7 minutes until the water has evaporated and the gyoza are cooked through.

  3. 8

    Serve

Remove the lid, let the gyoza cook for another minute to crisp up the bottoms, then serve hot with dipping sauce.

Dipping Sauce Preparation

  1. 9

    Mix the Dipping Sauce

In a small bowl, combine soy sauce, rice vinegar, sesame oil, chili oil, and sugar. Stir until the sugar is dissolved.
