Method

Preparing the Marinade

  1. 1

    Mix the Marinade

In a small bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper. Stir well to create a marinade.

  2. 2

    Marinate the Salmon

Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

Preparing the Vegetables

  1. 3

    Prepare the Vegetables

Wash and cut the asparagus, bell peppers, and zucchini into bite-sized pieces.

  2. 4

    Season the Vegetables

In a separate bowl, toss the vegetables with olive oil, salt, and black pepper.

Grilling the Salmon and Vegetables

  1. 5

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 400°F).

  2. 6

    Grill the Salmon

Remove the salmon from the marinade and place it skin-side down on the grill. Grill for 6-8 minutes on each side or until the salmon flakes easily with a fork.

  3. 7

    Grill the Vegetables

While the salmon is grilling, place the seasoned vegetables on the grill. Grill for about 5-7 minutes, turning occasionally until they are tender and slightly charred.

Serving

  1. 8

    Plate the Dish

Once the salmon and vegetables are cooked, remove them from the grill and serve immediately on a plate. Enjoy your grilled salmon with seasonal vegetables!
