Cooking the Rice

    Rinse the rice

    Place the long-grain rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch for fluffier rice.

    Boil water

    In a medium saucepan, bring 2 cups of water to a boil.

    Cook the rice

    Add the rinsed rice to the boiling water. Reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and water is absorbed.

    Fluff the rice

    Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.

Preparing the Curry Sauce

    Heat the oil

    In a large skillet or saucepan, heat 2 tablespoons of vegetable oil over medium heat.

    Sauté onions

    Add the finely chopped onion and sauté for 5-7 minutes, or until softened and translucent.

    Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

    Add 2 tablespoons of curry powder to the onion mixture and stir to combine, cooking for another minute.

    Pour in the can of coconut milk and 1 cup of vegetable broth, stirring well to combine.
