Using a sharp knife, slice the yellowtail fish into thin, bite-sized pieces. Aim for about 1/4 inch thickness for even texture.

Wash the jalapeno pepper, cut it in half, and remove the seeds if you prefer less heat. Slice the jalapeno into thin rings.

On a serving platter, arrange the yellowtail slices in a single layer. Top each slice with a ring of jalapeno and a small dollop of fish roe.

In a small bowl, whisk together the fresh lime juice, soy sauce, sesame oil, and honey until well combined.
