Prepare Sushi Rice

    Rinse the Rice

    In a fine mesh sieve, rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a rice cooker or pot, combine the rinsed sushi rice and water. Cook according to the rice cooker instructions or bring to a boil, then cover and reduce heat to low, cooking for 20 minutes.

    Season the Rice

    Once cooked, transfer the rice to a large bowl. Mix rice vinegar, sugar, and salt in a small bowl until dissolved, then gently fold into the warm rice. Let cool to room temperature.

Prepare Fillings

    Prepare Eel

    If not already done, slice the cooked eel into thin strips.

    Slice Avocado

    Cut the avocado in half, remove the pit, and slice it into thin strips.

    Slice Cucumber

    Cut the cucumber in half lengthwise, scoop out the seeds with a spoon, and slice into thin strips.

Assemble Sushi Rolls

    Lay Out Nori

    Place a bamboo sushi mat on a clean surface. Lay a nori sheet shiny side down on the mat.

    Spread Rice

    Wet your hands with water to prevent sticking. Take about a cup of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

    Add Fillings

    Arrange a few strips of eel, avocado, and cucumber horizontally across the rice.

    Roll the Sushi

    Using the mat, carefully roll the sushi away from you, applying gentle pressure to keep the roll tight. Roll until you reach the border of the nori.

    Seal the Roll

    Wet the edge of the nori with a little water to seal the roll. Press gently to secure.

    Slice the Roll

    Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.

    Arrange the sushi roll pieces on a plate. Serve with soy sauce, wasabi, and pickled ginger on the side.
