Sushi Rice Preparation

    Rinse and Cook the Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions.

    Season the Rice

    Once the rice is cooked, transfer it to a large bowl. Mix rice vinegar, sugar, and salt in a small bowl until dissolved, then gently fold this mixture into the rice. Allow the rice to cool to room temperature.

    Prepare the Mixture

    In a medium bowl, combine the diced yellowtail, Sriracha sauce, mayonnaise, chopped green onions, and sesame oil. Mix well until fully combined.

Sushi Roll Assembly

    Prepare the Rolling Station

    Place a bamboo sushi mat on a clean surface. Lay a sheet of nori, shiny side down, on the mat.

    Add the Rice

    Wet your hands to prevent sticking. Take about a handful of sushi rice and spread it evenly over the nori, leaving about an inch of space at the top.

    Add Fillings

    Place a line of the spicy yellowtail mixture across the center of the rice, followed by a few strips of cucumber and a few slices of avocado.

    Roll the Sushi

    Using the bamboo mat, start rolling the sushi away from you, pressing gently but firmly to create a tight roll. Continue rolling until the nori is sealed.

    Cut and Serve

    Using a sharp, wet knife, slice the roll into 6-8 pieces. Sprinkle sesame seeds on top if desired. Serve with soy sauce, pickled ginger, and wasabi.
