Preparing the Calamari

    Clean the Calamari

    Begin by rinsing the whole jumbo calamari under cold water. Remove the innards and the quill from each calamari, ensuring they are properly cleaned. Pat them dry with paper towels.

    Marinate the Calamari

    In a large bowl, combine the olive oil, minced garlic, chopped parsley, salt, and black pepper. Add the cleaned calamari and coat them thoroughly in the marinade. Let them marinate for at least 30 minutes.

Making the Ponzu Yuzu Sauce

    Combine Sauce Ingredients

    In a small bowl, whisk together the soy sauce, yuzu juice, rice vinegar, mirin, and dashi stock until well combined.

    Finish the Sauce

    Stir in the finely chopped green onion and sesame oil. Let the sauce sit for at least 15 minutes to allow the flavors to meld.

Grilling the Calamari

    Preheat the Grill

    Preheat the grill to medium-high heat. Make sure the grates are clean and lightly oiled to prevent sticking.

    Grill the Calamari

    Place the marinated calamari on the grill. Cook for about 3-4 minutes on each side or until they are opaque and have nice grill marks. Be careful not to overcook them as they can become tough.

    Remove the calamari from the grill and let them rest for a minute. Serve the grilled calamari with the ponzu yuzu sauce drizzled over the top or on the side for dipping.
