Prepare the Summer Rolls

Soak the Rice Paper
Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it softens. Remove and lay it flat on a clean surface.

Fill the Rice Paper
Place a lettuce leaf on the lower third of the rice paper. Add about 30 grams of cooked shrimp, a small handful of vermicelli noodles, and a tablespoon of crushed peanuts on top of the lettuce.

Roll the Summer Roll
Fold the sides of the rice paper over the filling, then starting from the bottom, roll it tightly upwards until the filling is enclosed. Repeat with the remaining ingredients.
Prepare the Mild Spicy Chili Sauce

Mix the Ingredients
In a small bowl, combine 2 tablespoons of chili sauce, 1 tablespoon of lime juice, 1 teaspoon of sugar, and 2 tablespoons of water. Stir well until the sugar is dissolved.
Prepare the Peanut Sauce

Combine the Peanut Sauce Ingredients
In another small bowl, mix 3 tablespoons of peanut butter, 1 tablespoon of soy sauce, 1 tablespoon of lime juice, and 2 tablespoons of water. Stir until smooth and well combined.
