Prepare the Tuna

Chill the Tuna
Remove the tuna from the skillet and let it cool for a few minutes. Once slightly cooled, wrap the tuna in plastic wrap and refrigerate for at least 30 minutes to firm up.
Make the Ponzu Dressing

Combine Ingredients
In a small bowl, whisk together the soy sauce, citrus juice, rice vinegar, and mirin until well combined.

Add Aromatics
Stir in the chopped green onions and grated ginger into the dressing mixture and set aside.
Slice and Serve

Slice the Tuna
Remove the tuna from the refrigerator, unwrap it, and using a sharp knife, slice it thinly against the grain into bite-sized pieces.

Plate the Tuna
Arrange the sliced tuna on a serving plate. Drizzle the ponzu dressing over the top.

Garnish
Sprinkle sesame seeds over the tuna and add microgreens or shredded seaweed as a garnish before serving.
