Prepare Sushi Rice

    Rinse and Cook Rice

    Rinse the sushi rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and 2.5 cups of water. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 20 minutes or until the water is absorbed.

    Season Rice

    Once cooked, remove the rice from heat and let it sit covered for 10 minutes. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the rice using a spatula. Allow the rice to cool to room temperature.

    Mix Tuna Filling

    In a medium bowl, combine the drained canned tuna, mayonnaise, soy sauce, chopped green onion, and Sriracha sauce. Mix well until all ingredients are fully incorporated.

Assemble Tuna Rolls

    Prepare Nori and Roll

    Place a bamboo sushi mat on a flat surface. Lay a sheet of nori, shiny side down, on the mat. With wet hands, spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge. Place a line of the tuna filling across the center of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Wet the top edge of the nori with a little water to seal the roll.

    Cut and Serve

    Using a sharp knife, slice the roll into 6-8 pieces. Sprinkle with sesame seeds and serve with optional wasabi and pickled ginger on the side.
